Here I had just been to the market (Sunday) so my produce was fresh and this always makes me feel motivated to cook.
However there are definitely other times when I don’t know what to cook and this is always my go to with back of the fridge veggies that I want to use.
I get sick of soups so this is a really handy one also if you have kids who want to help in the kitchen (the more involved they are the more likely they will be interested in eating it!) and even toddlers as its such a good on the go snack or meal!
Ingredients;
1/2 a small sweet potato grated
1 full broccoli grated
1 large zucchini grated
3 eggs
1 cup tapioca flour
Pinch of paprika
Salt and Pepper to taste
1/4 cup of grated cheese of choice (I used pecorino)
Method;
Mix all ingredients together to combine
If it feels dry add another egg
If too wet add some more flour
Pop onto warmed fry pan that has a little bit of olive oil and cook till brown
You could also do these in the oven to crisp them up a bit! @180 for about 8-10 minutes
Can also roll into balls and shallow fry
This recipe can be so versatile if you are that way inclined !
You can do this with potato and zucchini for example, Sweet potato and corn, carrot and sweet potato, brocolli and cheese, corn and creamed corn, get creative and let me know what you come up with!
Tapioca is a wonderful source of fibre for little ones - tapioca is the starch from cassava root. Its easy to digest, gluten-free and a great source of resistant starch which feeds the good bacteria in the gut!
If you don’t have tapioca on hand though almost any other flour will work it may just change the consistency -
Others I use;
Buckwheat flour
Almond Meal
Brown Rice flour
Chickpea Flour
Quinoa Flour
Its good to change it up as different flours have different nutrients!
Add a “dippy” sauce
I love lemon or lime on my fritters but you might also like some yoghurt or garlic dip!
